WHO CUT THE CHEESE???

All cheeses require the use of RENNET as an ingredient - which coagulates the milk, separating the liquid part from the solid part.
Traditionally, ANIMAL RENNET was used (enzymes derived from the stomach of ruminant animals).
But today, there are three alternatives:
GMO-derived FPC (Fermentation Produced Chymosin) made by pFIZER and made possible by genetic engineering. This rennet is made by taking the rennet producing gene out of the animal cell’s DNA string and then inserting it into a bacteria, yeast or mold host cell’s DNA string. This newly placed gene initiates production of the coagulation enzyme, and the host culture is cultivated and fermented. 90% of the cheese in the US is made using this GMO rennet. No thanks!
Microbial rennet, which is produced by a specific type of mold, fungus or yeast organism grown and fermented in a lab setting. This is popular since it is ‘vegetarian friendly’, but many cheese makers agree that it can produce a bitter cheese taste.
Vegetable rennet, which is produced from plants that produce certain enzymes that have coagulating properties. Some vegetable rennets have been used for a long time. However, they can also have undesirable effects on cheese flavor and are a little more unpredictable.
Cheese companies are not required to list the rennet source on the ingredient list, but most are likely microbial in nature which can cause gut distress for some people.
So, if you have not digested cheese well in the past, it may have been A1 dairy OR the cheesemaker used a microbial/GMO rennet (which can upset the digestive tract). I personally do NOT digest microbial rennets well at all.
Animal rennet (the ingredient) may cost more, but it results in a better tasting product that is typically digested better.

THE Question that requires an answer, on the record.
How about a moratorium on new water hookups for ABAG'S 14,405 forced housing units, as done in the 1970s drought, until after new water supplies are assured?
Show of hands if others feel the same way? Or Why don't supervisors demand the state pay for infrastructure costs of new mandated housing; Water pipes, sewers, other costs?
If they pull the "write your questions on cards" ploy and then ignore them, the questions need to be shouted out. Screw decorum. These officials are threatening our county and in some cases our lives with their acquiescence to Weiner and Newsom. If no one shows up to ask hard questions, this will be just another performative sideshow where the Keep Tahoe Blue "environmentalists" bleat along with the bouncing ball. MMWD and Supervisors can then claim "We had a meeting. We'll go forward with our obedience to the legislature."
Previous MMWD Board members stated "We will provide water meters to all new developments." With a mostly new board, this policy could be reversed. Message to public officials whining about "Their hands being tied by state law."
